An ode to Peaberry's & Honey BBQ Chicken Pizza


Last year Uriah and I spent a lot of time at an awesome little cafe here in town called Peaberry's.
We were so happy to discover it and ended up going there all the time.
There was a great loft with couches, they provided free internet and their hot drinks were pricey - but delish.


Another thing we loved about it was that it was nice quiet place for Uriah to study while I could just read or use the computer. Also, our house seemed to never warm up during last winter's constant freezing temps, and it was always so warm and toasty. Peaberry's was a wonderful escape to a cozy loft and mellow music.

I could go on and on about how wonderful Peaberry's was... from the service, the local art displays, etc...
However, the thing we both loved and cherished the most was the amazing pizza ever.

this pizza was...
in the words of Ferris Bueller,
"so choice"

Well, last summer, Peaberry's closed.
honestly, it was a very depressing thing to find out.
Our friend Laura was with Riah when he saw the sign on the door on that fateful day and she was afraid he might cry.
To this day it still hurts a little to think about, especially when it was replaced by Quizno's. (Lame, since when does Quizno's need a loft?)

We've figured out the solution to soften the pain of such a devastating loss of our dear and cherished Peaberry's.
And that is, to reincarnate the impeccable being of the Honey BBQ Chicken Pizza.
I just tried it one day and it was a success!
It's so yummy so I thought I'd share it with you!


For the dough you can use whatever recipe you want... I just thought I would throw in a pic of this cute little bundle waiting to rise!
Preheat Oven to 425ish
Again, any Honey BBQ sauce will do... but if you are feeling a little wild, Jack Daniels is excellent.
I always make two mini pizzas instead of one large... to honor the greatness that was Peaberry's.
and the smaller slices are easier to enjoy...
Well... I was rushing, so I didn't take pictures of the entire process,
(I'm sure you don't mind)
so here is what you do:
After putting the base BBQ sauce on,
top with:
small grilled chunks of chicken breast
then with fresh onion
(also yummy but I don't usually include: sliced tomato)
then cover toppings with more BBQ sauce (be generous)
and proceed to load with cheese (again, generously)
Pop those bad boys in the oven for about 15 minutes... or until the cheese melts.

and Voila! Your own personal Honey BBQ chicken pizza!
